Pickled Asparagus

If you've taken a look at our recipes on the blog, you'll notice that Jamie and I love using pickled vegetables whenever we can. They are a great way to get some veggies in a dish and they are an amazing way to add a pop of both color and flavor!

Not to mention pickled vegetables last around 1-2 months once opened but if you make them in batches, you can keep the canned, unopened pickled vegetables for essentially a lifetime.

We are particularly loving these pickled asparagus because they are tangy and salty with a hint of spice. They are making all of our spring meals dreams come true!

Ingredients for pickled asparagus

We alway make a huge batch of anything we pickle and these pickled asparagus did not disappoint! For an extra pop of flavor, we like pickling these with garlic, lemon and red pepper flakes.

The garlic is here as a very classical pairing with the asparagus, the lemon brings brightness and the little bit of heat from the red pepper flakes balances the flavors out. Making these pickled asparagus is extremely easy and all you need are the following ingredients:

  • Water
  • Rice vinegar
  • Granulated sugar
  • Kosher salt
  • Asparagus
  • Garlic cloves
  • Lemon
  • Red pepper flakes

Pickling asparagus

The process of pickling is super easy, even if this is your first time giving it a try! Here are the steps for pickling:

  1. Add the water, rice vinegar, salt and sugar to a small sauce pot and heat on medium heat, stirring occasionally until everything is dissolved and the mixture comes to a weak simmer.
  2. Cut the asparagus, peel and smash the garlic cloves, peel the zest from the lemon and add them all into your mason jar.
  3. Add a dash/pinch of red pepper flakes to each jar.
  4. Pour the brine over the asparagus, put a lid on the container and store in the fridge overnight until fully chilled.

That's all you need to do! Super simple and it'll only take around 10 - 20 minutes altogether depending on how much pickling you're planning on doing.

Ingredients

  • 1 ½ cups water
  • ¾ cups rice vinegar
  • ½ cup + 1 tablespoon of granulated sugar
  • 3 tablespoons
  • kosher salt
  • 1 pound of asparagus
  • 3 each garlic cloves (peeled & smashed)
  • The zest of 1 lemon
  • 1 dash (about ⅛ teaspoon) red pepper flakes

Instructions

  1. Add the water, rice vinegar, salt and sugar to a small sauce pot and heat on medium heat, stirring occasionally until everything is dissolved and the mixture comes to a weak simmer.
  2. In the meantime, cut the asparagus in halves and peel and smash the garlic cloves and add them all into your mason jars.
  3. Lightly peel the zest from the lemon, ensuring not to peel any of the pith (white part) from the lemon and add the zest to your mason jars. .
  4. Add a dash/pinch of red pepper flakes to each jar.
  5. When the liquid starts to simmer, pour the brine over the asparagus and mix lightly to ensure all the asparagus is submerged.
  6. Put a lid on the container and store in the fridge overnight until fully chilled.
