As you may know, Jamie and I first met working together at Market Table Bistro. I started working there the summer going into my junior year of high school and continued working throughout college and even a few days here and there after graduating. One of the things I loved to eat and was a great snack during a busy shift was the focaccia bread. Warmly called by us "our pocket bread". Why? Because we would cut pieces and store them in our apron pocket to eat throughout our shift. Though we always did get great family meals, we all loved eating the bread and would just snack on it. This recipe is an ode to that.
With a crispy top and perfectly soft center, this focaccia with caramelized onions and capers truly is the best!
