Pineapple Bourbon Mule

A balanced bourbon mule with pineapple, lime, mint, ginger beer and brown sugar simple syrup. Perfect for enjoying on a hot summer day where drinking bourbon straight should be left for the late evening.

Ingredients

  • 2 ounces bourbon
  • ½ ounce pineapple juice
  • 1 ounce ginger beer
  • 4 sprigs of mint
  • ¾ ounce lime juice
  • ½ ounce brown sugar simple syrup
  • 2 dashes orange bitters
  • 1 pinch of salt

Brown Sugar Simple Syrup

  • 1 cup brown sugar
  • 1 cup water

Instructions

For the Pineapple Bourbon Mule

  1. Add the bourbon, pineapple juice, mint, lime juice, brown sugar simple syrup, bitters and salt to your shaker along with a few cubes of ice.
  2. Shake for 10-15 seconds and strain into a glass with ice.
  3. Top with the ginger beer and enjoy.

For the Brown Sugar Simple Syrup

  1. Add the brown sugar and water to a pot and stir to dissolve the sugar.
  2. Bring the mixture to a boil and reduce to a low simmer.
  3. Continue to cook for 1 minute and then chill to serve.
