- 6 tablespoons chia seeds
- ½ teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- The zest of 1 lime
- The juice of ½ lime
- 1 teaspoon honey

Instructions
- Open the can of coconut milk and pour it into a bowl.
- Add the cinnamon, vanilla, salt, zest and juice of the lime, and the honey and whisk to combine.

- After the 5 minutes pass, stir the chia seeds with a fork to break up the clumps. Cover and refrigerate overnight, or for at least 2 hours.
- After allowing the chia seeds to hydrate, remove the chia seed pudding from the fridge, top with the pineapple, candied almonds, fresh mint, dehydrated coconut, pumpkin seeds and a drizzle of honey. Enjoy!
